Neohesperidin dihydrochalcone (NHDC) is a sweet substance of molecular weight 612.6 produced by alkaline hydrogenation of neohesperidin, which in its turn can be isolated from the peel of oranges. Aqueous solutions of 0.0045% NHDC and 5% sucrose are approximately equisweet.
Introduction
Neohesperidin dihydrochalcone(NHDC), was discovered during the 1960s for minimizing the taste of bitter flavorants in citrus juices. Neohesperidin when treated with potassium hydroxide or another strong base, and then catalytically hydrogenated, it becomes NHDC, a compound roughly 1500-1800 times sweeter than sugar at threshold concentrations;around 340 times sweeter than sugar weight-for-weight.

3. Used in savory products: paté, sauces and condiments, seasonings, mayonnaise, soups, fish and meat preserves. At very low levels (1-5 ppm) it enhances the food flavour.
4. Used in cosmetics: tooth-paste, mouth-wash.
5. Used in pharmaceutical products: NHDC attenuates the bitter taste in drug formulations.
6. Used in feed stuffs: the addition of NHDC improves the feed taste and therefore increases the daily feed intake with reduced feeding time.
